Skinny Fries and Our Anniversary

The title is random and not related!

So like the majority of the people out there… I wanted to start eating better and lose some weight. I was pinning on Pinterest {what else} and came across Skinnytaste.com. OmiWord Gina has great recipes!  What I especially liked was the fact that she has several recipes that Carter will like.  The first one I made was Skinny Texas Cheese Fries.  I know one would think that statement was an oxymoron, but a half a serving was 7 Point Plus value for Weight Watchers. Please visit

Gina’s Skinny Taste Skinny Texas Cheese Fries

for the complete recipe, but I will leave you with some pictures of how mine turned out.

Yum!

I used two small Yukon Gold potatoes, and reduce fat shredded cheese. They were so good!  Happy Eating.

IMG_1164On a side note Carter and I celebrated our FIRST ANNIVERSARY this week!  We went to the Opryland Hotel to stay the night!  We had an awesome view from our balcony of the Garden Concourse.IMG_1186

I had a little mishap with my ring!  The diamond fell out!  Good news I found it, bad news 1st anniversary with out it!

It was an absolute awesome trip!  One of the highlights was just stopping by the American Pickers, Antique Archeology store in Nashville! We literally passed it on the interstate and I said, THAT’S MIKE AND FRANK! So we exited off randomly and made our way back to the right street. They weren’t there but we saw some cool stuff and made a great memory.

We most certainly did NOT match on purpose! The old building was so cool. IMG_1200

My Sister’s Wedding

Gah, It seems like I go from posting a bunch to like a whole month without posting! I feel so guilty and it really makes me admire the people who have WAY more going than me that post everyday and make me a better teacher!

Im going to post some pics from my sister’s wedding and our Native American totem pole projects.

weekend wrap up

Homecomings galore this past weekend!  Believe it or not it has been ten years since my senior homecoming game at my high school and six years since I was on the homecoming court at UNA. The hubs and I spent the weekend visiting with old friends and cleaning up the house for my sissy Baking Shower on Sunday!  Can we say jam packed weekend?  Oh yeah and my Brat Pack friend had her precious baby Evan too!  Great weekend that hopefully will run into a great week at school.

this is me and little tonya.. my fantublous co-worker…this was crazy spirit day.  Our principals really wanted us to get into the spirit…one of them spray painted his hair red and they both wore crazy socks and a VERY spirited outfit….Every spirit day needs ribbons:DSCN2534

Several of my softball girls were on the court:

Updating and getting with it

My college professors always talked about a trait great teachers had in common… it was called withitness. Meaning you were with it at all times in your classroom, mainly during multiple activities such as centers.  I always thought I had that trait down pat in my classroom and in my life.  I usually can do several things at once and accomplish all the tasks in a fair amount of time.  Well that was before I was planning a wedding!  My withitness has flown out the door with 19 days until I say I DO!  I am way over due for a wedding update and since I am still up in the air about my teaching assignment that is all that I am thinking about!  I had my engagement pictures and bridal portraits done by my fabulous photographer Jennifer Tidwell.  I love my engagement picture for the paper:LH048_paper_engage

We went dressy for the classic olin mills pictures and then fun for our outdoor. I don’t have anymore to put on here right now but will in a short time.

Im not sure which to do list I am on or what I have and have not checked off but I do know that I am caught up with my 250+ thank- you notes from my showers {that were awesome by the way.  We are very BLESSED with great friends and family} My 525+ invitations that I hand calligraphied (sp?) are sent out and only one came back whoop whoop!  Bridesmaids dresses are here, tuxes are ordered, music is going to be amazing, and I am super pumped about the honeymoon… I guess somewhere in between all that there is going to be a gorgeous wedding. Here are some pictures from our showers:

Rainy Day Work Day

After being rained on at the games last night our softball tournament was rained out. So instead of lying around and doing nothing {after sleeping till about 10:30} I decided to be productive.  With my Daddy gone on a boys trip {Court Side Seats at the Alabama/Georgia game} my Momma came over and we got started on the wedding favors.  I really DISLIKE wedding favors like bride and groom (anything) really, wedding cake candles, heart (anything) haha. I am more impressed when I go to a wedding and get something a. I can eat or b. I can use.  So I decided to incorporate both things.  I’m not gonna give our surprise away until after the wedding for the readers who will be in attendance at the wedding but I will give a sneak peak!  The clothes pins will have magnets on the back so they can be {used} and as you probably already figured out they will hold something that you can {eat}. Nasty Nasty Rainy Day

The supplies strewn out all over the living room table and floor… DSCN1781    DSCN1783

My lovely mom and my “lovely” self haha this is what Saturday hair (that got rained on) and day old make up looks like..gross but this is the realness of my life:

We watched the Bama Game {Roll Tide, Yall} and about 4 different On Demand Shows, we got all 200 clothes pins covered with the paper and I got all but about 50 tied with the ribbon!

Finished product:

I love them. #1 because they are absolutely adorable #2 people can use them and most importantly #3 Momma and I made them together and had a great day despite the rain.
